Turkey Meatballs and Pasta


I really wanted to make meatballs with turkey meat and had seen a couple different recipes. I also didn't have any spaghetti noodles so I just used the pasta I had. I combined some different recipes and made it up as I cooked. It actually turned out delicious!

Heat pan with olive oil.
Combine some minced garlic, salt, pepper, garlic powder, breadcrumbs and one egg into a mixing bowl.
Roll about 1 lb to 1 1/2 lbs of turkey meat into little meatballs.
Roll the meatballs in the mixing bowl mixture.
Cook the pasta and drain.
Cook the meatballs in the pan.
Heat some pasta sauce (I used Ragu because I was so caught up in making the meatballs I forgot about sauce until the last minute). I also cooked some garlic bread (from a box) in the oven while everything else was cooking.

Oatmeal Cranberry White Chocolate Chunk Cookies


These cookies were delicious! I am bringing them (along with the pumpkin cookies below) to Thanksgiving.

2/3 cup butter, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old fashioned oats
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 6oz package of Craisins dried cranberries
2/3 cup white chocolate chunks or chips

Preheat oven to 375. Beat together butter, sugar, eggs. Combine oats, flour, baking soda and salt in a mixing bowl then combine slowly into electric mixer (I throw basically everything in one by one - screw the separate bowls, too many dishes). Stir in cranberries and white chocolate chips. Put on cookie sheet and bake for 10-12 mins. Cool on wire rack. Makes about 2 1/2 dozen cookies.

Fettuccine Alfredo with Chicken


I got this recipe from the Kraft Kitchens recipe...I improvised on the cream cheese as I only had "whipped" but it still turned out pretty good.
Need:
1/2 lb fettuccine
1 lb boneless skinless chicken breasts, cut into strips
1 1/4 cups fat free reduced sodium chicken broth
4 tsp flour
4 oz Neufchatel Cheese, cubed
3 tbsp grated parmesan cheese
1/4 tsp garlic powder
1/4 tsp pepper

Cook pasta. Heat a large skillet, add the chicken and cook all the way through. Remove chicken from skillet and add the broth, flour, Neufchatel cheese, parm cheese, garlic powder and pepper. Cook 2 mins or so, stirring constantly until mixture boils and thickens. Stir in chicken. Drain pasta and mix everything together in a big bowl. Sprinkle more cheese if desired. I also cooked up some garlic bread. Delicious!

45 North Pinot Gris


Another wine night! This is another Michigan wine from the 45 North Winery. This is a VERY light white so excellent for beginning/new wine drinkers.

Poblano Pepper Chicken Sausage and Mexican Beans and Rice







I love these sausages from Sam's Club (can you tell I am a big Sam's shopper?) and they come in a lot of different flavors/varieties. I cooked these up and then made Mexican beans and rice by combining a Mexican rice packet with a can of black beans (rinsed and drained). We also had some guacamole and tortilla chips, delicious!

Jerk Tilapia and Pineapple


I covered both sides of tilapia filets with jerk seasoning, salt and pepper. I then cooked it with some canned pineapple to get some of that flavor in it. I served this with whole grain rice. It was pretty quick and easy to make.

Black Star Farms Chardonnay


This wine is Michigan grown and we always pick it up on trips up north. Delicious after a long day!

Apple Bundt Cake


We had some fresh apples from the Cider Mill and I had just purchased a bundt cake pan, so I was dying to try this out. It was delicious!

Fiesta Chicken Casserole


I cut this recipe out of the coupon section of the paper for canned chicken breast. I used the cans of chicken from Sam's club.


1 package (15 oz) refrigerated pie crust (2 crusts) - I only used one)

1 jar (16 oz) salsa

1 can (10 3/4 oz) Campbell's condensed Cream of Chicken soup

1 cup sour cream - I used light sour cream

2 cups shredded cheese - I didn't use a full 2 cups, maybe 1 3/4 or so

1 package (24 oz) frozen whole kernel corn

2 cans (9.75 oz each) Swanson premium chunk chickn breast in water, drained

1 can (about 15 oz) black beans, rinsed and drained


Preheat oven to 400 degrees. Let the pie crusts sit at room temp until easy to handle. Stir the salsa, soup, sour cream, cheese, corn, chicken and beans. Put into a baking dish. Unfold the pie crust and use to cover the dish. Press the seam to seal and trim the edges. Bake for 40 mins or until crust is golden brown.
