Pork Tenderloin, Ravioli and Asparagus

I picked up a preseasoned pork tenderloin and some fresh asparagus for dinner. I bake the asparagus in the oven with some olive oil, salt, pepper and any seasoning that sounds good. I forgot to take pics of everything, but here is the set table and the wine we enjoyed for the evening!



Pumpkin White Chocolate Chip Cookies


I stole the receipe from amynicoletta and they were delicious!

1/2 cup butter
1 1/2 cup sugar
1 tsp vanilla
1 egg
1 cup pumpkin
2 2/3 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon (I added more after I tasted the batter)
1 tsp nutmeg (I added more after I tasted the batter)
1 cup white chocolate chips (I used way more than this)
1/2 cup nuts (use if I have around the house)
1 cup raisins (didn't use)

Cream together butter and sugar. When smooth and creamy add vanilla, egg and pumpkin. Mix dry ingredients together and sift 2 times. Then add to pumpkin mixture mixing well. (I throw everything into my Kitchenaid mixer and let it do all the work). Add chocolate chips and optional nuts/raisins. Drop by spoonfuls on cookie sheet. Bake 350 degrees for 12 minutes. (Has taken longer both times I have made these).

Mozarella, Tomatoes & Prosciutto Open Faced Sandwiches


B was not home for dinner so I got to eat whatever I wanted! I bought some fresh bread, tomatoes, mozarella and proscuitto and made some mini sandwiches with olive oil, salt and pepper - delicious!

Chicken and Asparagus Risotto

We love watching Top Chef and Hell's Kitchen and always hear about "risotto" but had never attempted it. I found a packaged recipe at Target and cooked some chicken breasts with seasoning in the oven. All in all it was quite tasty! I add some margarine and parmesan cheese to the risotto after it was cooked for some extra flavor.
For some reason I always forget to take pics before I pack them away for leftovers.
